Tempeh Tacos with Chipotle Cream and Avocado Corn Salsa 

One of my students at Bastyr University, Jeff Johnson, who works for the Kashi company, presented this dish as part of his final project and I thought they were not only very tasty but so easy-to-make!   I served them to my family and got raves.  Jeff, of course, got an A.

8 ounces tempeh 
2-3 tablespoons extra-virgin olive oil
½ teaspoon sea salt
2-3 tablespoons lime juice
1 tablespoon chili powder or Mexican seasoning
1 teaspoon cumin
½ onion, small dice
¼ cup chopped cilantro
Shredded romaine lettuce

Chipotle Cream
1 teaspoon adobe sauce

Avocado Salsa
1 ripe medium avocados, peeled, pitted and diced
½ large ripe tomato
2 tablespoons finely chopped red or white onion
1 clove garlic, minced or pressed
½ cup corn kernels
2 tablespoons fresh cilantro
Juice of 1 large lime
½ teaspoon salt


Crumble or chop tempeh into small pieces and place in a mixing bowl.  Put 1 tablespoon of the olive oil, salt, lime juice, chili powder and cumin on the tempeh and mix well.  Let stand 10 to 30 minutes, the longer time allows more absorption of the flavor.

Heat the other 2 tablespoons of oil in a large skillet.  Add onion and sauté until soft.  Add marinated tempeh and keep mixture moving in the pan until tempeh turns golden brown.  

Blend sour cream, chipotle chili and adobe sauce in a bowl with an immersion blender or combine these ingredients in a regular blender; set aside.

If using frozen corn, be sure to thaw kernels first or briefly blanch to hasten thawing.  Combine all ingredients for avocado salsa In a medium bowl.  Toss gently maintaining chunky consistency.   

Warm corn tortillas in a skillet with just enough butter or olive oil to move it around.   Fill each tortilla with about ¼ cup of tempeh mixture, avocado salsa, lettuce and drizzle chipotle cream over all.

Preparation time:  30 minutes to marinate, 15 minutes to make tacos
Makes 8 tacos

I can never find good tortillas that I like when I want tacos, I usually make them, which is a bit of extra work. Does anyone have a brand they like? (flour or corn, I like both)

I love this brand of tortillas for dishes like this: La Tortilla Factory -- Hand Made Style Corn Tortillas -- 8 tortillas per package, yellow or white corn. They are smaller than some, but flexible, thick and chewy.

I finaly got a chance to make this for my family and THEY LOVED IT! They didn't know what to think of the Tempeh at first, but now they want to know what else I can do with it. This is good thing, but it means more work for me lol.

Wow, this looks great! Love the mango nectar in it. Question, do the cophitle peppers get chopped and the same as the jalapeno peppers? I'm adding this to my must try next time my store has pork shoulder on sale. Thanks for sharing!
